Omega-3 fatty acids are essential to survival for all species, but ironically are not synthesized by the body, thus must be obtained from dietary sources. Due to domestication, dietary consumption today has changed drastically, and often is hampered by a low content of essential fats and nutrients such as vitamin B12, thiamine, folate and essential fatty acids[1]. The difference between omega-3 and omega-6 fatty acids is the location of the first double bond. Omega-3 fatty acids are characterized by the first double bond located at the third carbon position from the methyl end (H3C) of the carbon chain. Omega-6 fatty acids have the double bond located in the sixth position. In animals, just as in humans, omega 6 fatty acids tend to promote inflammation, whereas omega-3 fatty acids function to reduce inflammation. |
